Healthy Muffin Recipes

My kids love muffins! I can get them to eat just about anything if I make a muffin out of it! Here is a recent favorite. These things will not last very long in my house.

Oat & Carrot Muffins

2 1/2 cups grated carrots
1/2 cup brown sugar
1/2 cup applesauce
1/3 cup coconut oil
1 large egg
1 cup all purpose flour
1/2 cup rolled oats
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon pumpkin pie spice
1/4 teaspoon baking powder

Preheat oven to 350°. Prepare a muffin pan by lining with cupcake liners or lightly coating with baking spray.

In the bowl of a food processor, add the carrots, sugar, applesauce, coconut oil and egg, and process until just combined. In a separate bowl, combine the flour, oats, baking soda, salt, pumpkin pie spice and baking powder. Add the carrot mixture to the flour and mix until combined.

Divide the batter evenly in the muffin pan.

Bake in the oven for about 20 minutes, or until a toothpick inserted in the center comes out clean.

I love a green smoothie.

Here is my go to recipe for a good smoothie.

12 ounces L & A Pineapple Coconut juice (I can usually find this at Meijer)
2 cups baby spinach
half a lemon – juiced
Small sliver of fresh ginger (I like to cut my ginger root and freeze it so it is easy to add to smoothies)
4-6 frozen strawberries
1-2 ice cubes
Mix everything up in a blender and enjoy!
