Healthy Muffin Recipes

My kids love muffins! I can get them to eat just about anything if I make a muffin out of it! Here is a recent favorite. These things will not last very long in my house.

Oat & Carrot Muffins

2 1/2 cups grated carrots
1/2 cup brown sugar
1/2 cup applesauce
1/3 cup coconut oil
1 large egg
1 cup all purpose flour
1/2 cup rolled oats
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon pumpkin pie spice
1/4 teaspoon baking powder

Preheat oven to 350°. Prepare a muffin pan by lining with cupcake liners or lightly coating with baking spray.

In the bowl of a food processor, add the carrots, sugar, applesauce, coconut oil and egg, and process until just combined. In a separate bowl, combine the flour, oats, baking soda, salt, pumpkin pie spice and baking powder. Add the carrot mixture to the flour and mix until combined.

Divide the batter evenly in the muffin pan.

Bake in the oven for about 20 minutes, or until a toothpick inserted in the center comes out clean.



Kettle Bell Workout


Marla mentioned that she had done some kettle bell workouts before. I had to try it! I ran out to Target immediately and purchased one. I thought the 7 pound kettle bell would be a good place to start. We tried the Jillian Michael’s kettle bell workout and it was so much fun! My core was extremely sore the next day. Can’t wait to do it again!

Lemon essential oil


I was first introduced to essential oils at an aroma yoga class. The instructor dropped some doTERRA lemon oil into my water. Delicious! It was like sunshine in a bottle. I loved it and immediately purchased my own bottle. I love to use a few drops of lemon oil in my water, in my diffuser to clean the air and uplift my mood, and mixed with water and vinegar as a multi purpose cleaner. Lemon is known as a powerful aromatic, topical, and internal cleanser that can be used to complement many other oils. I think lemon oil is a perfect oil to reach for when you are just starting out on your essential oils journey!

Quick Yoga Routine

The first time I stepped onto a yoga mat was 7 years ago, after the birth of my second child. I was immediately hooked and spent several years hitting the studio 2-3 times per week. Kids, work, and everyday life got in the way and before long I had completely abandoned my yoga practice. I have been trying to find ways to incorporate yoga back into my daily routine, even though I am short on time and energy. I love Sara Ivanhoe’s Taste: 10 Short Yoga Sequences! Each segment is about 5 minutes long so you can do just one or mix and match according to what you need that day! Even I can get on my mat for 5 minutes a day!


My favorite smoothie recipe


I love a green smoothie.

Here is my go to recipe for a good smoothie.

12 ounces L & A Pineapple Coconut juice (I can usually find this at Meijer)
2 cups baby spinach
half a lemon – juiced
Small sliver of fresh ginger (I like to cut my ginger root and freeze it so it is easy to add to smoothies)
4-6 frozen strawberries
1-2 ice cubes
Mix everything up in a blender and enjoy!
